quantatitive test for fats in milk (full fat, skimmed and semi-skimmed)

Hello,
I’m looking for someone to give me an idea of where to go with my research project. I am considering the nutritional value of milk of different fat concentrations, I’ve established a suitable test to separate the casein (main protein in most commercial milks) and a test to establish calcium quantity and now triglycerides (the majority sugar present) but I can’t seem to get a quantitative test for fats in milk because they are saturated fats and I am really struggling to find a test! any help would be massively appreciated!
