antioxidants and seeds

My science fair project title is: Which vitamin prevents antioxidants most effectively in seeds? I know about antioxidants and how they help prevent diseases in the body, but this project doesn't make any sense to me. I've been trying to find some information on the internet but haven't had any luck. Can you help?
