Enzymatic Browning Questions

I am doing a project on the enzymatic browning of fruit. Here are a few questions I'm having trouble finding the answers to:
1. Why do some fruits turn brown when cut and others don't?
2. Why do the fruits turn brown specifically and not any other colour?

That's all! Any help is very much appreciated. Thank you guys so much!

Have you seen this nice article which explains the process of enzymatic browning and actually talks about this project from Science buddies? Hope it answers your questions.
