Enzymatic Browning Questions

Hello!
I am doing a project on the enzymatic browning of fruit. Here are a few questions I'm having trouble finding the answers to:
1. Why do some fruits turn brown when cut and others don't?
2. Why do the fruits turn brown specifically and not any other colour?
