How is cotton candy made?

Hi, I'm doing a school project on cotton candy and I need a live source to answer my question about the sweet. These are my questions, "What causes granulated sugar to turn fluffy and stringy? How is it possible that the sugar does not just burn up immediately when heat is applied? How can making cotton candy turn into a successful business? What are the health concerns behind eating (too much) cotton candy? What is the history behind cotton candy?" Those are all my questions if someone could answer that'd be great, also please leave your name and the date your answer was written so I know what to cite in my project, thanks!
