How to test crispness

My son's science fair project is about the crispness of french fries using various methods of cooking. He is having trouble creating a reliable test for crispness. He was using a method of bending the french fry and recording the angle at which it broke, but the data does not seem very reliable. Do you have a suggestion for how he could measure crispness?

It may be hard to find a quantitative way to measure the degree of crispness -- although whether or not the fry breaks when bent can help with the extremes.

This project involves baking potatoes and using two preparation methods and then evaluating crispness. Your student might want to look at how crispness was measured in this one even though it sounds like his project may be a bit different:
