I'm looking to do a project to see if it's easier to remember words if they have been highlighted in different colors. Has any one got any information or seen any research about that?

This sounds like an exciting project. There are numerous studies that have analyzed the effect of color on memory, so it should be easy to start researching. However, keep in mind that some websites are not credible, which means that they may give you false information.
