how can a bridge like that hold all those heavy coins i dont understand how that works

Creating the folds in the paper makes it so the weight of the coins is supported by the inch thick fold instead of the 1/1000th of an inch thickness. To understand this, look at the example given in the activity: it is like bending a ruler the thick way instead of the thin way.
