How can I measure the acrylamide content of potatoes?

I am currently looking for a mentor with a lab to help me with this, but any at-home suggestions? Cost is no matter.

Hello anyaj14,

Please look at the information in this link about detecting acrylamide in food.

Detection of the small amounts requires lots of materials and expensive instruments. Do you really mean that "Cost is no matter?"

I think your best bet is to find someone with the lab equipment who is willing to help you. Even with the equipment, a lot of skilled work is involved.

Have you found any reference that gives a simpler way to detect the acrylamide?

Do you need any tips about finding a mentor?

Well, after seeing that, I do realize that I need help finding a mentor with that equipment. I have not found any other way of acrylamide detection, thank you for sharing this! :D

You should browse the websites of universities near you. Look at the Chemistry, Biology and related departments for someone who does research that is related to your project. Pick a few possibilities, and send them an e-mail describing what you would like to accomplish. I'm sure they will be willing to help you if they have the facilities you need.

Your project is still a difficult one. If you don't find a way to make progress, then be sure to pick a simpler project before time runs out.
