Potatoes

I am on the final stage of completing my science project, I only need an interview. There are three days left until it is due. Please answer these questions ASAP. For my project, I am baking, frying, boiling, and microwaving potatoes and observing their physical properties afterward (appearance, softness, moisture,and how long it took for the potato to cook to 210 degrees Fahrenheit). I understand that the Science buddies announcements say not to post background questions, but my teacher requires me to. please answer all of the questions that you can.

What is your name?
What is your occupation?
Do you enjoy your line of work?
How long have you worked as what you are?
What do you find most interesting about your occupation?
Are there any scientific questions that you are frequently asked?
How do potatoes soften, and where inside a potato does it occur?
Is there a relationship to a potato's moisture and it's softness?
Why are potatoes so starchy?
Is there a special way in which potatoes must be treated and/or harvested?
Do you have any specific ways in which you would conduct an experiment like mine?

Science Buddies policy is not to ask for or post personal information. This is for the safety of both you, the student, and those providing advice. We cannot help with your line of questioning. Even those questions above that are not of a personal nature, they are not particularly looking for advice concerning the execution of a science experiment. Unless someone just happened to be a potato farmer or otherwise an expert on potatos, these are not the kind of questions we typically are able to answer.
