Why mold grows on cheese

Hi Matthew,

Mold spores are always floating around in the air, and when they land on a suitable food source, they will germinate and grow. Cheese provides an ideal growth medium because it contains high water content, a slightly acidic pH, and lots of protein and fat. Ecologically, molds are important because they help recycle elements. There are many different types of molds, but all require oxygen and moisture.
