Finding a Suitable Mentor

Hi Sciencebuddies,
I find it hard to find a mentor who would be willing to help in a science fair project (for Intel) in a field I would be interested in. I have fortunately found a mentor in the past year, but she just gave me papers to read and instructed me to do very useless/menial things (washing testtubes, refilling, etc.)
What is your advice on finding a good mentor? Should I attend some university summer courses and contact professors there?
