I don't know the procedure for testing the quantity of omega 3s in eggs could I get some help as to how or where I could have this done?

This is not my area of expertise, but I searched "how to test omega 3 content" on the internet, and found several links for at-home blood test kits for omega 3. It appears they cost $149 per test. Maybe you can try contacting one of the companies (http://www.vitalchoice.com/shop/pc/view ... tegory=756) to see whether the kit could be used to test the quantity in eggs.

May I ask why you chose this interesting topic? What is your hypothesis?

I became interested in chia seeds after watching a program on them on tv. Last year I did a science fair project with chia seeds testing whether they would improve gluten free bread. This year I was looking to continue my project with chia seeds and because chia seeds are extremely high in protien and omega 3 and there is a demand for omega 3 enriched eggs, I wanted to test if chia seeds could translate their high omega 3 and protien level into the eggs in significant amounts. I believe the chia seeds will increase the amounts of protien and omega 3s but unforchunatly I don't think this is a practical strategy for egg producers as chia seeds are very costly.

This is definitely an interesting topic. As I understand it, you would use eggs without chia seeds (and therefore less hypothesized omega 3) as the control, and test eggs with chia seeds (more hypothesized omega 3 content)?
Just out of curiosity - this may help me assist you better - how were you planning to translate the chia seeds into the eggs?
Also, how did you obtain chia seeds last year - would you be able to obtain them from the same vendor for perhaps a reduced cost?

I think heatherL gave you some great advice with finding test kits; emailing local experts (professors) or companies as well would probably greatly help you answer your questions and further outline a plan of action.
