Can you give any reason why one apple would brown faster than another?

Hi pete,
You should take a look at some of the links from the previous reply I posted. One of the articles says - "Granny Smith apples do not brown as quickly as some other cultivars because they generally have a little more acid which will limit the PPO enzyme activity." So maybe you should look up how acidic different types of apples are. Here is a link to a table of apple varieties:

You should be able to determine which varieties are more or less acidic and get an idea of which ones would brown faster or slower.
You could also do a google search yourself using the terms apple and acid. It is important to get all your background information together prior to designing your experiment.
