Vitamin C content in Vegetables

I'm doing a science fair project on "Does Cooking Fruits and Vegetables reduce their Vitamin C content? " For my materials, it is said that i need soluble starch. My first question is what is soluble starch? Secondly, can corn starch substitute as soluble starch?

Hi Lovelykixx,

I tried to look up this project, but I couldn't find it. Could you please post a link to the directions? Without seeing the directions, I can't be sure that the answer I give below is correct. But, with that caveat:

It looks like soluble starch is a specific chemical compound also called amylodextrin. Your science teacher may have some at the school, or she or he may be able to help you order some.
