Science Buddies: "Ask an Expert"

I must investigate how an enzyme converts sucrose into glucose and how this changes the amount of glucose we digest from different foods. What is an alternative I could use other than invertase, since I'm having a delay with the invertase coming in the mail. Could I use inverted sugar syrup or something?

I'd like to add that an answer by tomorrow would probably be ideal. We're pretty stressed out about this
