Question About Fruit Browning

Could someone please explain to me (in detail) the process of fruit browning? I've searched the web, but have found nothing but very basic information, and need specifics. Any help is greatly appreciated.

Thanks for the information. Does anyone know of a way I could test the level of browning in fruits besides looking at the color and trying to estimate its intensity?
