Extracting Sugar from Plants

Hi :)

I have finally decided on a science fair project for this year and am about to commence it, however I have a question regarding the first step.

I am planning to create a bioethanol from plants, however I am unsure as to how I will go about extracting the sugars from the plant which I will them ferment and distil the ethanol etc.

The only source I found on how to extract sugar from plants was an eHow article dealing with sugarcane. Would the process be the same for the ones I am experimenting with such as variegated thistle and capeweed?

Never mind, I didn't realise that you didn't have to extract it from plants, rather you just have to mash it up and ferment it like with grapes and wine :)
