What would the variables of this project be? I can't figure out what the controls are.

Controlled variables are quantities that a scientist wants to remain constant. They are those things that can have an impact on the outcome of an experiment. Also, the experiment should have a control which is a test sample the will not undergo test conditions so the samples that do can be compared to the control.
