turbidity and protease

I'm making a homemade turbidity meter to find the level of protease in various pineapple juice. I found a project that tracks the changes in protease activity but not the amount of protease. So in conclusion, I am wondering if I can use a turbidity meter to find the amount of protease activity in pineapple milk. Please help.

I’m assuming that you’re working on the project described here:

In this project you use a turbidity meter to track changes in turbidity of milk as a protease from pineapple juice “chops up” the proteins from the milk. The rate that the milk solution loses turbidity (“clears up”) is an indication of the amount of protease activity.
