* genomic stability
or is it something not listed here

Your question is an interesting one and the suggested answers are all processes that affect longevity, but this is a website for designing and executing science fair projects.
If you just want answers to questions then there are Q & A sites that can help you. If you are planning a project on telomeres or stem cells then you need to give us more details about your hypothesis and experiments.

thank you for your response, I would like to do an expiranent but I don't know which route to go with which is why I asked the question.

All of the things you listed are involved in the senescence and eventual death of humans. There is no one event that causes death except for trauma, heart attack, stroke, etc.
I'm still not clear on what question you want to ask. This is a vastly complicated area of research and you need to narrow down your focus to one aspect and then decide on what model you will use to test your hypothesis. We can't help you create a project without more information. I would suggest you read some more on aging and decide which aspect interests you most--telomeres, stem cells, oxidation, mutations, etc. Once you have a specific area then we can talk about what organisms you can use to do experiments.
