I am guessing you are referring to this project:

Just my opinion, but I think that among the reasons why this is important is to understanding of the underlying chemical reactions. (Baking Soda is a Base and Baking Powder contains both base and acid (and some drying agent) and you are observing how these reactions take place in the real world, specifically making "bread" / baked goods.
