Hi - My kid is doing a home experiment to break water into H2 and O2 and measuring the impact of changing the charge and the amount of salt used. The problem is that there she is not collecting the gas released as the water is in an open beaker. Is there a way to collect and measure the amount of gas released and correlate the battery charge and salt used?

Thank you for the question. The best way to collect gas is by water displacement with a technique called gas over water. Here is a link to a resource that discusses how to set one up. You will have to make the experiment part Air tight.
