Hi - it should work, with the caveat that if too much dye enters, it may color everything, making it harder to see the individual dots. Instead kids will see that the whole shell is colored. If left for 24 hours and they have a good kitchen scale they should also be able to see that the eggs weigh more after being in the water for so long.
