ORAC Assay Testing Antioxidants in Chicken

I am try to see how the method of cooking food (testing chicken) changes the antioxidant levels, and by how much. I am in 9th grade STEM program at my high school. My teacher would but let me use the apple browning process, so I found the ORAC assay, could anyone please tell me how to do use and get results of an ORAC assay kit?

Hello!

The ORAC assay can be used to measure antioxidant levels, but the problem is the kit is very expensive and the equipment you need to run the test can only be found in a professional lab. Do you have access to a professional lab, perhaps one at a nearby university, to do your experiment? If not, we will probably have to brainstorm ways to simplify your experiment.
