Hello,
The lemon volcano is an example of an acid-base reaction. The actual reaction is:
C6​H8​O7​ + 3NaHCO3 --> Na3​C6​H5​O7​ + 3H2​O + 3CO2
This is a double-replacement reaction that then goes through decomposition as carbonic acid (H2CO3) is unstable and breaks apart into H2O and CO2.
