Organic nonorganic: Measuring BRIX levels in fruits and Vi

Hi,
My name is Drew Abesamis and I am doing a project on organic foods vs non-organic foods and is the quality for organic foods really worth the price?
I am measuring BRIX (amount of soluble sugar) in fruits and vitamins.
To do this, i am going to use a refractometer to measure the BRIX Levels in the fruits. I am also going to appl separate tests that will support or argue against my hypothesis. The problem is :what is the best way to measure nutrients in food? and or measure for vitamins A b c d and e? Is the best way to use a refractometer, or something else?
Any ideas or links would be great to help me solve this particular problem.
