I need an interview with an expert

My partner and I are working on a science fair experiment for the grade 8 science fair.
There are some questions we need answered by an expert on chocolate or candy.
Our science project has to do with chocolate. One of us is freezing chocolate and doing various tests on the 6" by 2" bars.
The other is adding things such as marshmallows, raisins and M&Ms into chocolate (which has been melted) then freezing the bars and
letting them change to room temperature afterwards. After they are room temperature the same tests are conducted on that chocolate.
We would have to create a special tray to put the melted chocolate in that we can later place in a freezer.
The would be 1" deep, 6" in length and 2" in width.
