The first thing I would suggest is that you need to do a good deal of background research. What is peripheral vision? How does the eye 'see' things? What determines eye color? I would also suggest researching a condition called 'snow blindness', which does depend on eye color.
Once you have done all of that, you will need to set up your experiment. To do so, you will need to come up with some way of measuring peripheral vision. Are you thinking of the amount of vision (like when people can see things) or whether or not they can see things well? For me, detecting motion in the peripheral vision is much easier than detecting something stationary...but that could vary! (I have blue eyes!)
Next, you will want to get together a lot of test subjects. Try to have equal number of boys and girls, and keep age more or less constant if you can. If, for example, you only test one person and your blue eyed person is a middle-aged man and your green-eyed person is a female sixth-grader, you cannot conclude that any differences you observe are due to eye color!
