The second project above is rated at difficulty level 5, somewhat easier than the first one(level 6-7).

A level 5 project is appropriate for a grade 6 or 7 student, so it might still be a little hard for you..
I recommend looking at the second project. Read the introduction and check out the links in the Bibliography section. How much do you understand?
Learning science concepts in my own experience was a long slow process. At the first stage I just got a picture in my head about how the phenomenon worked and I pretty much ignored the equations about the theory. I was happy if I sort of understood how it worked and how the measurement worked. Later I studied it again in chemistry and physics classes after I had studied algebra - then the theory and equations started to make more sense. Not until I studied surface tension in college in Physical Chemistry (my senior year of college) did the subject really begin to make complete sense. So go easy on yourself and be content understanding as much as you can, and don’t stress too much if it doesn’t make complete sense - it probably will make sense about the time you have studied algebra, physics, and chemistry at several grade levels. Fifth grade is just the beginning of the process, and the start of a fabulous adventure of discovery. Enjoy and be amazed at what you will discover as you travel the education path!! And always remember that science should be fun and an a fascinating adventure - if it isn’t you are doing something wrong!
