Science Buddies: "Ask an Expert"

my project involves putting iodine in different kinds of cooking oils to test which oils have the greatest amount of unsaturated fat....... i need help with deciding on my variables,
i was thinking, and what im changing is the amount of iodine needed to get rid of all the double bonds, but then the dependent variable would pretty much also be the amount of iodine needed to keep the oil purple (once all double bonds have chemically reacted the oil stays purple)

the title of my project is "Use the Power of Purple to Evaluate Fats in Cooking Oils" and can be found under cooking and food science
