The topic I want to do is how a person's eye color affects their sensitivity to light. I need to have a topic that is measurable because I must be able to create a graph. I don't think that sensitivity can be measured, but how could I test this idea and how would I graph the data? Thank you!

That is a really interesting topic!
I can't think of ways to measure sensitivity, but maybe you can ask them questions and maybe graph the degree of light sensitivity (number of questions they answered "yes" to).
For example, these questions: (http://irlen.com/light_sensitivity_self_test.php)
Do you experience strain or fatigue working or reading under fluorescent lights?
Bothered by sunlight?
Bothered by glare outside; glare off chrome on cars?
Bothered by glare off high gloss white paper?
Bothered by glare on hazy days?
Bothered by bright lights?
Bothered by fluorescent lights?
Bothered by headlights from oncoming traffic?
Do you frequently wear sunglasses?
Do you become tired or drowsy under bright or fluorescent lighting?
Do you get a headache from fluorescent lighting?
Do you feel antsy or fidgety when under fluorescent lighting?
Does your performance deteriorate under bright or fluorescent lighting?
Do you feel like there is too much light when reading?
Do you feel like there is not enough light when reading?
Do you read in dim lighting?
Do you feel like you need less light to read?
