As a regular baker, I'd imagine the answer depends on many factors:
the cookies you're making (some are meant to spread more, some are meant to keep their shape)
the temperature and humidity in your kitchen
your mixing technique
and your personal taste--some people like 'em crunchy, some like 'em chewy
But there are several possible experiments you could do by varying one or another of those factors.
