A thesis dealing with the history of the potato in the Basque Country

Today, the potato is firmly established in our diet, but in actual fact it has only been with us for little more than two centuries, and at first it was not even appreciated as a foodstuff. The researcher David Palanca has studied the first century in the history of this tuber in the Basque Country, starting with its introduction and going up until the point when its cultivation and consumption were completely widespread.
