How would I measure the degree of oxidation?

First off, what are you defining as the result of oxidation? The color change of the food? The area that changes color? How deep into the object the change occurs? You need to choose one or two indicators to base your conclusions on, then decide how to measure. For example, you could calculate the surface area of the entire object, and then measure the area of the changed section, and discuss it as a percentage for each of your test cases. Are you having a control object (one with no wrap)?
