I have performed an experiment investigating the effect of pH on tomato plant growth. As part of my research I have discovered that the pH of the soil affects the solubility of nutrients within the soil and therefore nutrient availability. However I am not sure as to HOW the pH affects the solubility of nutrients. If you could help in answering my question that would be much appreciated.

Basically, certain solids which are weakly soluble in pure water are actually more soluble in acidic solutions. Examples include compounds that produce hydroxide ions when dissolved, such as metal hydroxides. The effect of pH on solubility will vary, of course, based upon the specific nutrients you tested.
