molecular structure of different types of wood

I am doing my science fair report on the factors that make an old guitar better quality then a new guitar. I figured I should start with the wood composition. I know that over time, the molecular structure of wood changes because of vibration. I would like to know more about the way that they change. If any possible links or people that may help please let me know. Thank you :)
