You may want to try the Topic Selection Wizard on the top of the page to find a project based on your interests. Remember to look for projects with readily available materials since your project is due so soon. Look for a difficulty level based on your grade and interest.

i did go through the list and i picked one named "The nose knows smell but how about taste" but i need to do a big report and finish the experiment in 3-4 hours, along with other homework, and the due is on Friday February 5th, 2010. and i am not a good fast worker, the project is worth 60% of my grade, and i am really nervous about if i can finish it in time or not.

Well, yes, for any good science fair project a report is needed. Here is my recommendation:
1) Read the Project Abstract+Goal+Introduction. Make sure that you understand it fully.
2) Research the Background Research terms, questions and concepts specified in the project. Have at least one-two good source(s) of information per term/concept. Check out the bibliography links as well.
3) Even though you are lacking time, put an effort to fully comprehend your background research. Background research is crucial for knowing how and why your experiment worked, as well as understanding experiment key terms. Do not try to rush while doing background research.
4) After understanding your research, gather materials+start your controlled experiment. Remember your variables! Record any data needed.

Here are some additional suggestions that will help you. If the science project is 60% of your grade, then spend most of your time tonight on this. It is possible to do a complete project in 3-4 hours.
Look at the assignment sheet your teacher gave you. It probably has a list of sections that must be included in your project. Make sure you include at least one sentence on all of the requirements. Your project board should include a question, hypothesis, purpose, background, procedure, results, conclusion, and bibliography . Science fair projects are usually scored on a point basis, so make sure you have something in each section so you get credit for the section.
Here’s some background information on the sense of taste and smell. This will help you explain the science behind your project and give you information for the conclusion section as well. Explaining the science behind the project is very important.

According to your experiment guide, you should do the following to analyze data and make graphs:
Analyze Your Data
1. Make three large charts listing the food samples down the side and the volunteer's identification number along the top.
2. On one chart, record each volunteer's response(s) about the flavor of each sample when he/she had the nose plugs on.
3. On the second chart, record each volunteer's response(s) when they removed the nose plugs.
4. On the third chart, score the accuracy of each volunteer in identifying each sample with and without the nose plugs. Put "0" for wrong answer, "1" for an answer that is close, and "2" for a correct answer.
5. Compare the volunteers' flavor descriptions when they had the nose plugs on versus when they had the nose plugs off. Were there many changes in description of the food when they took the nose plugs off? Were the words the volunteers used more descriptive when the nose plugs were on or off?
6. On the first two charts, circle the responses that accurately match the food's real flavor. Which food samples had more accurate descriptions by the volunteers? Which chart had the most accurate descriptions?
7. On the third chart, total the values of each volunteer's responses with and without the nose plugs.
8. Do you see any differences in the total number of correct/nearly correct responses to wrong answers between wearing nose plugs and not wearing them? Were any particular foods easier to identify than others?

10. For a guide on how to summarize your results and write conclusions based on your data, see Conclusions.
