Hi, I have to do a laboratory report on extraction of pigment in different temperature, and we did an experiment already. What we did was boil a small piece of red cabbage in different temperature.
What I don't get is why we get more pigments(dye) in a higher temperature?

A simple answer to your question is that the pigment in red cabbage (anthocyanin) is water-soluble. Solids are more soluble in liquids at higher temperatures, so a higher temperature allows more of the pigment to dissolve into the water.
