macrical - I can't give you a formula off the top of my head, but here is a look-up table that shows the relationship of sugar content in a water solution (as density) and it's related Brix value. You should be able to do some other web search on these terms, but perhaps this information will be sufficient for your needs.

It basically has the same data, but with a little more background that could be helpful, especially if you need sources for the introduction of a paper you might be writing for your project.
