There are several project ideas on the Science Buddies website that deal with the Stroop Effect. Reading the introductory material of these will give you more information, and each contains a bibliography that will lead you to even more information.

To answer your questions, you will need to do some research and reading. The Stroop Effect is very popular as a research topic, and I believe you will find a number of readily available sources of information when you begin your search.
