pigments in apples
Do pigments in apples make oxidation occur faster? Or slower? please help. thank you

Supplying "Do pigments in apples make oxidation occur faster?" to answers.com yields a large number of matches. Briefly reading through the matches, it appears that sugar has a broader impact than pigment, though I wouldn't rule out out pigment, without research. One could test apples with various pigmentation and see if oxidation were affected.
