Science Fair Project: Sucrose & Glucose & Fructose, Oh My! Uncovering Hidden Sugar in Your Food

When finding the glucose concentration of a certain food with high amounts of sugar, which will then have to be diluted, do you use the dilution when adding the enzyme invertase to the food?

Hi ailangilang,

Welcome to the Ask an Expert forums! You should add the invertase enzyme to the diluted solution. Also, remember when calculating your results to "undilute" your measurements. In other words, if you measure a glucose concentration in the 10:1 dilute solution of 1%, the glucose concentration in the actual food is 10%.
