Hello,
I am interested in quantifying the amount of starch contained in my samples. My experiment is to cook rice using different methods and check if the quantity of starch changes, especially reduces with certain cooking methods.
Can you suggest some methods to quantify it?

I can't think of a straightforward way to quantify starch/carbs. Everything I found online requires expensive lab equipment. Perhaps someone else can think of something?

This experiment typically works very well. Basically, you burn small samples of food underneath a container of water, measure the water temperature before burning the food and its highest temperature during the burning, and use a particular equation to calculate how many calories were burned. This is covered much more thoroughly in the link I sent. Good luck!

You could try seeing relative amounts of starch in the different types of cooked rice using an iodine solution. The iodine will react with the starches in the rice and change colour.
One way to do this would be to create liquid solutions with a standard amount of water and iodine mixed in. You could then add the same amount of rice from each of your cooking methods, mix it, and then wait a certain amount of time before seeing if there is a difference in the colour change in each of the solutions. The iodine will turn different shades of blue relative to the amount of starch in the solution released from the rice (darker colour equals more starch). This isn't really a direct way to quantify the amount of starch, but it is still indicative of different amounts of starch released by the rice relative to cooking methods.
