Hello everyone! I am doing a science fair project on whether dark green, leafy veggies are higher in vitamin C content than their lighter-colored counterparts. I searched all around and I could not find anything that provided the information needed for the project. I believe that darker leafy greens are higher in vitamin C than their lighter colored counterparts because the only reason leafy veggies like spinach and kale are darker is because they do not contain as much water as their lighter colored counterparts thus giving them a higher content in vitamin C. Can someone please confirm or deny my concept? Thank you and have a great day! :D

What I've always heard is that darker green vegetables absorb more light and can synthesize more vitamins than the light colored greens. I've never heard the water theory.

What will your experiment be? Are you planning to make solutions from the different kinds of leaves and test them for vitamin C?

I HAVE NOW CHANGED IT TO WHETER OR NOT ORGANIC OR NON ORGANIC EFFECTS THE CONTENT OF VITAMIN C IN THE DIFFERENT COLORS. :D

That's a well-debated topic so you're sure to find a bunch of background information on that. I found this (http://www.npr.org/sections/thesalt/201 ... -after-all) which was a discussion on NPR about various research projects. Tracking down those papers might be a good place to start.
