Testing for lactose in ice cream

Post by deleted-351719 »

Hi, We would like to do a variation on the lactose experiment, testing to see if different flavors of ice cream contain varying amounts of lactose. However, as the pH strips test for glucose, would the sugar in the ice creams make our results invalid? Is there a way to test only the lactose glucose vs any glucose from the added sugar? Thanks for your help! Kindly, Laura

Hi Laura,

Which experiment are you talking about? Scibuddies has a project for determining lactose, glucose and sucrose concentrations in smoothies and milk shakes, but the same method should work on ice cream: https://www.sciencebuddies.org/science- ... background

Did you read the Procedure for that project? It explains how to use enzymes and glucose test strips to determine the relative concentrations of all three sugars.

See if this information answers your question. If not, post again and we will try to help.
