Trebuchets can be a lot of fun to build and experiment with - sounds like an interesting project. The particular project idea that you linked to is an abbreviated project, which is why it doesn't have details on how to design the trebuchet. You will need to find a trebuchet design on another website, and then modify the design to explore how arm length or counterweight mass affect the projectile distance.

Here are some sites that describe how to build a small-scale trebuchet. Please note that I haven't personally built any of these, so I can't vouch for one design versus another. But, these ones seem to be popular. You can also do your own internet searching to find designs. Amazon might even sell trebuchet kits.
