Can you measure porosity by measuring empty space?

Comparing soapstone to granite and need a big question that measures something about them to compare porosity or heat resistant or staining or strength

Here is a project that includes a protocol for measuring the porosity of rocks:

The procedure will allow you to measure the pore differences between granite and soapstone. This is an excellent topic for a science fair project.
