Welcome to Science Buddies! The project sounds really interesting and I hope you enjoyed doing it.

For a science fair project title, many people like to use a question, as it leads people (the judges) to wonder what the answer is.
Perhaps "How does soil affect the pH of water in it?" or "Can soil affect pH?"
