Datad Trends
My child studied the effects of substituting sugar for applesauce in both chocolate chip and sugar cookies. He conducted two trials of each type of cookie, labeling the cookies A, B, C and D and giving taste testers samples of each cookie (chocolate chip first then sugar) along with a questionnaire asking if they noticed a difference in the sight, feel and taste of the cookies, which cookie they preferred and if they could guess which ingredient was substituted and with what. He is now having difficulty determining what the trends in the data would be and what information to put in his data table. Any ideas would be greatly appreciated.

Sounds like a tasty project!
I would hypothesize that cookies containing applesauce would rise a bit more than those with just sugar and they should have an apple flavor, depending on how much applesauce you added. I would guess that cookies made with just sugar would probably be a little more crunchy than those with apple sauce.
I can't say anything about your data until I see it. I don't think 'trend' is the word you want for a test like this. All your questions appear to be of the Yes/No variety (except for stating a preference and guessing the ingredient), so what you would be expecting to see would be consistency in the questionnaires from one tester to the next with respect to the appearance, feel and flavor of the cookies. I would put the results into a table so they can be compared more easily.
Did the testers all notice differences in the applesauce versions vs the sugar versions? Some people may be better taste testers than others. That's why when taste tests are done commercially, a large group of several 100 people is used. Was there a clear preference for one type of cookie? Did anyone identify the applesauce?
Please reply and let us know the results of your cookie test. I think I'll try using applesauce (and sugar!) in my next batch of chocolate cookies and see what happens.
